Tandoori chicken gets its name from the bell-shaped tandoor clay oven which is also used to make naan, or Indian flatbread. Skinless legs and thighs are marinated in a tenderizing mixture of yogurt, lemon juice, and spices and the meat is slashed to the bone in several places helping the marinade penetrate and the chicken cook more quickly. The chicken gets its characteristic red hue from either lots of fiery chile or the addition of red food dye.

If you’ve ever had a salad roll from a Vietnamese restaurant, you’ve eaten a rice paper wrapper. They are super thin wrappers traditionally made from rice, water and salt that can be filled with almost anything. Since they are so thin, the wrappers are almost translucent so you can see whatever is inside. They also have a nice chewiness to them. Wrapping rice paper is easy — just as easy as wrapping a burrito. You will also get better the more often you do it. Even so, they don’t need to be perfect!

They wear dark red robes, and they are particularly noticeable walking around barefoot in the early morning, seeking out donations of food for their morning meal. Monks only get to eat what they collect (and unlike European monks, they aren't allowed to grow their own food). Certainly you don't see many fat monks in Myanmar, and some of the older ones (who presumably are life-long followers) are positively skeletal.

Irish soda bread – or just soda bread, if you prefer – is a type of quick bread that uses baking soda as a leavener. While this may not seem like much of a revelation these days due to the prevalence of baking soda in all kinds of recipes, it was a boon to bakers in Ireland in the mid 1800s. At that time, Ireland did not have a strong tradition of yeast breadmaking because, unlike many other European countries, the country did not produce much of the high-protein (hard wheat) flour necessary for making good yeast breads. When baking soda was introduced to the country, it pretty much replaced yeast. It produced a reliable rise in the oven, made tasty loaves of bread and would work perfectly with the softer Irish flour.
Soda bread only takes 2 or 3 minutes to make and 30 - 40 minutes to bake. It's also great with sultanas, chocolate, olives, sun dried tomatoes or caramelized onions added, so the possibilities are endless for the humble soda bread. The late and great Anthony Bourdain was so much more than a chef. He was a teacher, a doer, an adventurer.
But as much as he loved risk and living on the edge, he also loved experiencing different cultures firsthand. If his show Parts Unknown is any indication, he was an adventurer through and through. This delicious, creamy drink was originally made from dried and ground tiger nuts. The milky results are combined with water and sugar, then filtered to create a taste similar to rice pudding. This version is called horchata de cufa, and it was made popular in Spain.
You may be more familiar with the Mexican version. It’s made from rice milk, cinnamon, and sugar, and has a more milky texture.
The truth is, there is no one way of making horchata. Other countries have their own unique spin on the drink, all using different plant-based ingredients. No matter what version of horchata you choose to indulge in, the famous Latin American drink is now part of North American food culture as well, whether it’s the classic recipe or a flavor of ice cream.
Latin American cuisine has always been a beautiful melange of cultural influences, and its African roots are an essential part of that mosaic.

Pipirrana is a typical Spanish salad originating from Andalusia. It has numerous variations because each province has a different method of preparation and different ingredients. However, one of the more traditional versions is made with cucumbers, onions, green peppers, and tomatoes. This refreshing salad is usually dressed with olive oil, and vinegar, and slices of bread are often used as an accompaniment that is soaked in it, while tuna and olives are often added in order to elevate the flavors. It is believed that pipirrana was invented by Spanish field workers of Andalusia, Murcia, and La Mancha, who would prepare it with fresh vegetables, so it is safe to assume that tuna and olives were not originally used in the salad, except on festive occasions.

Chimichurri is an herb-based condiment that is a culinary specialty of Argentina and Uruguay. Typically served alongside grilled steaks, roasted beef and pork sausages, it is made from parsley, dried oregano, garlic, salt and pepper in a base of olive oil and vinegar. The Argentine gourmet Miguel Brascó claims that the word chimichurri came about when the British were captured after the failed British invasions of the Río de la Plata in 1806-1807. The prisoners asked for condiments for their food, mixing English, aboriginal and Spanish words. Still other stories say the name of the sauce comes from the Basque settlers who arrived in Argentina in the 19th century, and the name of the sauce comes from the term tximitxurri, loosely translated as "a mixture of several things in no particular order."
