
Raspberry Mint Mocktail
Serves: 1 person
This easy Breakfast Casserole recipe is made with eggs, sausage, and cheese and only takes a few minutes to throw together. You can make ahead of time, so it's the perfect breakfast casserole for a busy weekday!
Ingredients
• 7 fresh raspberries
• 6-8 fresh mint leaves
• 1 tablespoon freshly squeezed lime juice
• Innocent Summer fruits juice
• Sparkling water, soda water or San pellegrino limonata
• Ice cubes
• Additional raspberries and mint leaves for garnish (optional)
Instructions
1. In a glass add the raspberries, mint leaves, honey or agave syrup, and lime juice. Muddle with a spoon or back end of a rolling pin!
2. Slowly pour in the fruit juice, I like to do equal parts fruit juice to equal parts carbonated drink, followed by the carbonated drink of your choice!
3. Garnish and Serve:
• If desired, garnish each glass with a few fresh raspberries and a sprig of mint for an extra pop of colour and flavour.
• Serve immediately and enjoy!
