Chimichurri Recipe

What is Chimichurri you may be asking? Chimichurri is an herb-based condiment that is a culinary specialty of Argentina and Uruguay. Typically served alongside grilled steaks, roasted beef and pork sausages, it is made from parsley, dried oregano, garlic, salt and pepper in a base of olive oil and vinegar. Some versions add a pinch of hot pepper; others add chopped cilantro or a bit of chopped onion. The amount of garlic varies from a few cloves to a whole head. Whilst this sauce is most commonly used on steak, it's just as delicious on poultry, seafood, vegetables, or just a nice piece of bread.
