Black Pudding Recipe

Black pudding (a sausage made from blood, meat, fat, oatmeal, and bread or potato fillers), and Irish bacon (taken from the back of the pig instead of the belly) are a must at any Irish breakfast. They can be ordered, along with Irish bangers, at many butchers. The idea of making a kind of sausage using congealed pigs blood is one that is fairly widespread throughout the world. The French have their boudin noir, the Spanish their morcilla and the Brits their black pudding, or blood pudding.
